However, for thousands of years, humanity has successfully coped with the task of preserving meat using only natural resources and ingenuity. These methods not only allowed us to survive, but also created gastronomic traditions that we still value today.
The basis of all ancient technologies was the fight against bacteria, the reproduction of which requires heat and moisture. Conservation this was achieved by changing the chemical composition of the product or its physical state. People have learned to use salt, smoke, fat, cold and even natural fermentation, turning perishable raw materials into strategic reserves that can survive a long winter or a long journey.
Understanding these processes today is important not only for historical reconstruction, but also for survival in extreme situations when electricity is not available. Knowledge of the principles dehydration and fermentation allows you to safely prepare food in the field. In this article we will look at the main methods that our ancestors used around the world.
Drying and drying: removing moisture
The most accessible and ancient way of preserving meat was drying. Bacteria cannot grow in a dry environment, so removing moisture was key. The meat was cut into thin strips along the grain and hung outdoors, often in a draft or direct sunlight. This method was especially common in hot and arid regions, where the air itself acted as a powerful desiccant.
The drying process required constant monitoring so that the product did not rot at the beginning of the process and did not become too tough at the end. Often the meat was first lightly fried over an open fire or treated with smoke, which created a protective film on the surface. Dehydration reduced the weight of the product several times, which made it ideal for long trips and military campaigns.

Salt was “gold” of antiquity not only as a seasoning, but also as a powerful preservative. The principle of action of salt is based on osmosis: it draws moisture from bacterial cells and the meat itself, making the environment unsuitable for the life of microorganisms. There were two main methods: dry salting and salting in brine.
When dry salting, pieces of meat were generously rubbed with coarse rock salt and placed in wooden barrels or stone containers, pouring each layer. Under pressure from its own weight and salt, the meat released its juices, forming a natural brine in which it could be stored for months. This method made it possible to create strategic reserves that did not spoil even at room temperature.
⚠️ Attention: The use of iodized salt for long-term storage of meat is unacceptable, since iodine can cause fat oxidation and the appearance of an unpleasant aftertaste. Use only pure rock salt.
Liquid salting, or salting in brine (saturated saline solution), was used for more tender pieces or offal. The salt concentration in the water had to be very high so that the product did not float and become completely saturated. Sometimes saltpeter was added to the brine, which helped preserve the red color of the meat and enhanced the preservative effect, although the mechanism of action of this substance was not yet known.
Smoking: smoke protection
Smoking is an ingenious combination of drying, heating and chemical treatment with combustion products. Smoke contains phenols, creosote and other substances that have strong antiseptic properties and penetrate deep into the meat tissue. In addition, smoking gave the product a unique aroma and taste, highly valued in all cultures.
Cold and hot smoking were distinguished. The cold was carried out at a temperature no higher than 25-30 degrees Celsius and lasted several days. Such meat (for example, balyk or dry-cured delicacies) retained the structure of the raw product, but became resistant to spoilage. Hot smoking at temperatures up to 80-100 degrees actually cooked the meat, making it ready for use, but its shelf life was shorter.
For smoking they used hardwood: alder, oak, beech, fruit trees. Coniferous wood they were absolutely not suitable, since the resins they contained gave the ball bitterness and could make it toxic. The process required a special design of the smokehouse, where the source of fire and smoke was separate from the product.

One of the most reliable, although high-calorie storage methods is preservation in fat, known as the confit method. The essence of the method is simple: fully cooked meat was poured with rendered animal fat (pork, beef or goose) in an airtight container. The fat solidified, creating a layer impenetrable to air.
In the absence of oxygen, aerobic bacteria could not develop, which made it possible to store such reserves for months. Before consumption, the fat layer was skimmed off and the meat was heated or used in soups and stews. This method was especially popular among the peoples of the North and among French peasants, where access to salt or the possibility of smoking was limited.
Why does fat not spoil?
Refined fat contains virtually no water, which makes it an unsuitable environment for the growth of bacteria. The main condition is that the meat must be completely immersed in fat, without contact with air.
An important condition was the preliminary thorough frying or stewing of the meat in order to kill the existing microflora before pouring. Dishes with a narrow neck were also used (clay pots, glass jars), which were often additionally sealed with wax or lard. Confit allowed to preserve the delicate texture of the meat, which could not be obtained by drying.
Freezing and glaciers
Although there were no electric refrigerators, cold has been used since ancient times. In northern latitudes, meat was simply frozen outdoors in winter. The pieces were chopped with an ax and warmed by the fire before cooking. This was the most natural and effective way, preserving all nutritional properties.
To store supplies for the summer, glaciers were built - deep underground cellars, where snow and ice were filled in winter, layered with straw and sawdust for thermal insulation.
