The most obvious and ancient method of cooling was the use of natural ice. In winter, ice was harvested in huge quantities by cutting blocks from frozen rivers and lakes. These blocks were placed in special underground storage facilities, known as glaciers or cellars.
The design of such storage facilities was thought out to the smallest detail. Deep pits were often lined with stone or brick, and on top they created a thick heat-insulating “coat” of straw, sawdust and earth. Inside such chambers, the temperature remained close to zero even in the midst of the summer heat.
