These methods made it possible to preserve the nutritional value of food for many months and sometimes years. Smoking is a combination of drying, salting and smoke treatment. The smoke contains phenols and other substances that have a strong antiseptic effect. They penetrate into the deep layers of the product, stopping the growth of bacteria and imparting a specific aroma. They smoked meat, fish, cheese and even some fruits.
The process was divided into cold and hot smoking. Cold smoking was carried out at a temperature of 20-25 degrees for several days or even weeks. The product was greatly dehydrated and could be stored for a very long time.
