In the modern world, it is difficult to imagine life without an electric refrigerator, which keeps our products fresh around the clock. However, a hundred years ago, when there were no compressors or refrigerants, people somehow managed to stock up on meat for the entire winter. How did they manage to avoid spoilage of perishable products in conditions when the average temperature in summer reached +30 degrees?
The answer lies in the deep knowledge of physics, chemistry and biological processes, which was passed on from generation to generation. Traditional methods of preservation based on three pillars: lowering the temperature, removing moisture and chemical treatment of the environment. These methods were so effective that some of them are still used in the food industry, just on an industrial scale.
In this article we will look in detail at how our ancestors set up storage facilities and processed meat so that it remained edible for months. You will be surprised how complex and well-thought-out these systems were, which made it possible to survive long winters without a single gram of spoiled food.
Glaciers and cellars: cold temperature engineering
The basis for storing meat was special structures that can be called prototypes of modern refrigerators. Glacier represented an underground a storage facility in the ground, often built of logs or stone, which was filled with ice stored in winter. The principle of operation was to create a thermos: thick walls and an earthen embankment did not allow heat inside, and melting ice maintained the temperature around 0 degrees.
It was important not just to throw ice, but to properly organize ventilation. Products covered with straw or felt so that the cold the air circulated, but did not evaporate too quickly. Meat in such conditions could be stored for several weeks, and if the ice did not have time to melt by mid-summer, then throughout the hot season.
Materials with high heat capacity were used for construction. The bottom was often lined with clay, which became hard and cold when dried. The walls were insulated with moss, sawdust or manure, which seemed strange, but worked effectively as an insulator.
There were simpler options for small farms. The meat could be lowered into deep wells or buried in sealed containers in the ground, where the temperature remained low even in summer. This made it possible to preserve the freshness of the product for up to several days without additional processing.

Salting and soaking in brine
One of the most common methods of preserving meat was salting. Salt acted as a powerful preservative, drawing moisture from tissues and creating an environment unsuitable for the growth of bacteria. This process required a large amount of salt, so this resource was prepared in advance.
There were two main methods: dry salting and wet (in brine). During dry salting, pieces of meat were rubbed with a mixture of salt, saltpeter and spices, tightly placed in barrels and pressed down under heavy pressure. Saltpeter (potassium nitrate) played a critical role in maintaining the pink color of the meat and preventing the development of botulism.
In brine, meat was kept in a concentrated salt solution, often with the addition of spices for flavor. Such barrels were lowered into the cellar, where the product could be stored for months. Before eating, the meat must be soaked in water or milk to remove excess salt.

Drying and air drying
Removing moisture is the oldest method of preservation. Dried meat (balyk, basturma, prosciutto) is prepared by long-term drying under special conditions. In villages, they used attics, special dryers for this, or simply stretched pieces of meat under sheds where there were drafts.
The drying process took from several weeks to several months. The meat was pre-salted to start the dehydration process, and then hung in a cool, well-ventilated place. It was important to protect the product from flies and other insects, so it was often wrapped in gauze or paper.
As a result, the meat lost up to 60% of its moisture, which made it impossible for bacteria to develop. The salt concentration and dryness created a natural barrier to spoilage. Such meat could be stored for years if low humidity conditions were met.

Interestingly, different regions had their own characteristics. In the north, meat was dried in the frosty wind, producing stroganina, and in the south, in the sun, producing dried beef. The main thing was to prevent the meat from starting to rot before it dries.
Smoking: smoke as a preservative
Smoking is not just a way to add flavor, but a powerful preservation technology. Smoke contains phenols, creosote and other substances that are strong antiseptics. They penetrate the surface layer of meat, forming a protective film and killing microbes.
There was hot and cold smoking. Hot cooking was carried out at temperatures up to 80-100 degrees, the meat was baked and could be stored for several days. Cold smoking occurred at a temperature of 20-30 degrees for several days or even weeks. It was the cold method that made it possible to store meat for the winter.
Alder, apple, cherry or oak chips were used for smoking. They tried not to use conifers because of the resins that could cause bitterness. Smokehouses were built so that the smoke cooled down as it passed through a long pipe before reaching the product.

After smoking, the meat was often additionally dried in air. This created another protective layer. Smoked meats were an integral part of the diet of travelers and workers in the field, since they did not require special storage conditions.
Preservation in fat (confit)
The method known as confit consisted of completely immersing meat in melted fat. Fat (pork, beef or goose), when solidified, blocked the access to oxygen, without which aerobic bacteria cannot reproduce.
The meat was first fried or stewed until cooked, then tightly placed in clay pots or glass jars. A layer of fat several centimeters thick was poured on top. When the fat solidified, it turned into an airtight plug.
Such preparations were stored in a cold cellar. Before consumption, the top layer of fat was often skimmed off (although it could be reused) and the meat was reheated. This was one of the most reliable methods, allowing the product to be kept in excellent condition for up to a year.
It was important to use only high-quality, melted fat without meat layers, otherwise it could go rancid. Salt was often added to the fat for additional preservation.
Freezing with natural cold
In the northern regions, the problem was solved radically - by freezing. In winter, the meat was simply taken outside or into an unheated barn, where the temperature dropped below -30 degrees. The product froze through and became hard as stone.
Such meat was called “ice cream”. It was placed in large boxes, sprinkled with snow or sawdust for thermal insulation. The main thing was not to let it thaw ahead of time. Therefore, supplies were used up gradually, cutting off pieces as needed.
The key feature was that the meat was not completely defrosted before cooking, but was cut into thin slices directly from the frozen carcass, which retained the maximum of nutrients. This method made it possible to store meat almost until spring without loss of quality.
However, this method had a risk: with sudden temperature changes, the meat could “suffocate” or become moldy if the air supply was not completely blocked by snow. Therefore, the layer of snow was constantly renewed and compacted.

Use of natural antiseptics
In addition to salt and smoke, our ancestors actively used herbs and berries. Juniper, horseradish leaves, currants, cherries, as well as various spices (cloves, pepper) not only flavored the meat, but also suppressed the growth of bacteria.
Meat was often layered with nettles or wrapped in a cloth soaked in vinegar. An acidic environment is also an excellent preservative. In some regions, meat was doused with sour milk or whey before drying.
Clay was also used as a protective coating. A piece of meat was coated with clay porridge and baked or dried. When the clay dried, it created a durable shell that protected against insects and air. Before eating, the clay crust was broken.
