Before the invention of electricity and the mass distribution of household refrigeration chambers, preserving meat was a complex task that required deep knowledge and strict discipline. Family survival often depended on how competently the home cook or owner could process the carcass immediately after slaughter. There were many ways to extend the shelf life of meat from several days to several months. Technology processing varied depending on the climate, availability of resources and cultural traditions of the region. The most obvious and effective way was to use the low ambient temperature environment.
