Today we take the electric refrigerator for granted, but a hundred years ago humanity managed without this complex household appliance. Preserving perishable foods was a matter of survival, not just convenience. People used deep knowledge of nature, physics and chemistry to extend the life of meat, milk and vegetables for many months.

The effectiveness of these methods often amazes the imagination of modern people. In some cases, food prepared according to ancient recipes is stored better than in modern freezers with their temperature changes due to frequent opening of the doors. The basis of all methods was maximum isolation of the product from bacteria and oxygen. For this purpose, natural preservativeswere used, such as salt, vinegar, fat and smoke. Glaciers and natural cold

Before the advent of compressors, the only source of cold was natural ice. It was harvested in winter on rivers and lakes, when the ice thickness reached 40-50 centimeters. The blocks were chopped with axes and saws, after which they were transported to specially equipped storage facilities - glaciers. These were deep underground structures with thick walls made of wood, covered with sawdust, straw or earth.

Inside such a storage facility, the temperature even in summer remained close to zero. The ice was laid in layers, each row sprinkled with sawdust to minimize melting. Products were placed on shelves or in drawers, often wrapped in fabric. Condensationformed during melting was drained through special gutters so that water did not fall on the supplies.

Salt and sugar: chemistry of preservation

Salt has been the main preservative in human history. It creates an environment in which bacteria cannot multiply by drawing moisture out of them. The process of salting meat, fish or vegetables was called salting. For this, large wooden barrels were used, where the product was placed in layers and sprinkled with coarse rock salt.

Sugar acted in a similar way, creating high osmotic pressure. Jam, honey and various syrups could be stored for years without sterilization if the sugar concentration was high enough.
