We are accustomed to the fact that cold is available at the click of a finger, and this has radically changed our life and diet. However, even a hundred years ago, people successfully survived without access to electricity and modern cooling technologies.
Life without artificial cold required from our ancestors a deep understanding of natural processes, ingenuity and constant vigilance. Food safety depended not on the thermostat, but on the correct human actions. In this article we will look at what methods were used by generations before us and how this knowledge can be useful in the modern world.
The basis of survival was not just storage, but constant transformation products. Food couldn’t just be put on the shelf - it had to be prepared for a long wait in the wings. This created a unique food culture, where each season dictated its own rules for preparations.
Glaciers and cellars: natural cold
The main analogue of a modern refrigerator was cellar or a specially equipped glacier. These structures were built taking into account physics: the deep earth itself maintains a stable temperature, which in summer is much lower than on the surface. Thermal insulation was achieved through thick walls, often double, with a layer of sawdust, straw or clay.
Ice was harvested in winter by cutting down huge blocks on frozen rivers and lakes. They were placed in deep holes, sprinkled with salt and sawdust to reduce melting.
