Modernization of the internal chamber and installation of gratings

After cleaning the body, the stage of remodeling the internal begins space. Standard shelves made of plastic or glass are not suitable for hot air and heavy smoke, so they are replaced with metal structures. It is best to use stainless steel or galvanized profile, as they are not subject to corrosion and are easy to clean.

Gratings for food are located at different levels. The distance between them should be sufficient for smoke to circulate freely around carcasses or pieces of meat. If you plan to smoke large products, for example, whole fish or hams, the lower shelves can be made removable or adjustable in height.

Organization of a smoke removal and ventilation system

A high-quality smokehouse is unthinkable without a proper ventilation system. It is advisable to equip these holes with adjustable dampers to control the intensity of airflow.

Is forced ventilation necessary?

For classic cold smoking, natural draft is sufficient. Forced ventilation (compressor) is used in professional installations or when using complex smoke generators, but in a home smokehouse from a refrigerator this is unnecessary and can disrupt the temperature regime.

There are two main ways to supply smoke: through a separate firebox (pit or brick) or using an electric smoke generator. The first option is more traditional and requires digging a trench. The firebox is located 2-3 meters from the refrigerator at a level below the bottom of the chamber.

A trench about 30-40 cm deep connects the firebox and the smokehouse. A metal pipe is laid in it or a brick channel is laid out, which is then covered with earth. Such a long path is necessary so that the smoke has time to cool to the required 20-25 degrees before entering the chamber. The inlet hole in the refrigerator is made in the lower part of the rear or side wall.

If you choose the option with smoke generator, then the design is simplified. The device is connected directly to the inlet pipe at the bottom of the cabinet. This allows you to install a smokehouse anywhere, even on a balcony (subject to fire safety rules), and does not require excavation work.

Smoking technology and choice of wood

After assembling the structure, it’s time for practice. Not all types of wood are suitable for cold smoking. It is strictly forbidden to use coniferous species (pine, spruce) due to the high content of resins, which will make the products bitter and toxic. It is also not recommended to use birch without removing the bark, as it can make the product tarry.

The ideal choice would be fruit trees: apple, pear, cherry, as well as alder, beech and oak. The wood chips should be of medium size, slightly moistened (but not wet!), so that they do not burst into open flame, but smolder slowly. The cold smoking process is long and can take from 12 hours to 3 days depending on the type of product.

The temperature regime must be strictly observed. If the temperature rises above 30-35 degrees, the process of cooking the protein will begin, and the product will not be able to be stored for a long time, losing its smoked properties. Therefore, in hot weather, it is better to shade the smokehouse from the refrigerator or cover it with a wet cloth.

The readiness of the product is determined visually and by touch. The surface should be golden brown, dry and firm. After the process is completed, the products must be allowed to “rest” in the air for 1-2 days so that the smoke is evenly distributed inside and the pungent odor disappears.

How long do you need to smoke different products?

Smoking time varies: fish (herring, mackerel) - 12-18 hours, lard - 24-36 hours, meat delicacies (brisket, balyk) - 2-3 days. Cheeses are smoked for only 4-6 hours, as they quickly absorb smoke.

Is it possible to use sawdust instead of wood chips?

It is not recommended to use small sawdust, as they can quickly flare up or create too dense smoke, which will block the access of oxygen. It is better to use wood chips with a fraction of 5-20 mm. If there is only sawdust, they need to be mixed with larger wood chips or used in special smoke generators with a screw feed.

Do you need to salt the products before smoking?

Yes, cold smoking does not kill all bacteria instantly, so preliminary salting (dry or in brine) is required. Salt creates an environment unsuitable for the development of microorganisms and acts as a preservative. After salting, the product must be soaked to remove excess salt and dried in air.

What to do if condensation has formed inside?

Condensation is a sign of excess humidity or poor ventilation. It is necessary to increase the air flow through the lower openings or lengthen the exhaust pipe. You can also install a simple heating element inside (for example, an incandescent lamp) to slightly heat the air and reduce humidity, but make sure that the temperature does not exceed the norm.
