Instead of throwing a massive body into a landfill, where it will take up space for decades, you get a functional device for preparing delicacies. Cold smoking in a homemade chamber allows you to obtain products with a unique aroma and a long shelf life, unavailable with conventional cooking or frying.

Selecting and preparing the refrigerator body

Plastic internal chambers of modern models can be used, but with caution: when heated for a long time, even from cold smoke, some types of plastic can emit an unpleasant odor or harmful substances.
Carefully inspect the condition of the rubber seals on the door. It is critical for the smoking process that the chamber be sealed. If the rubber is cracked or has lost its elasticity, smoke will escape and traction will be impaired. In this case, it is better to replace the seals or carefully seal the joints with heat-resistant sealant.

Making and connecting a smoke generator
Making your own smoke source is a key step. For cold smoking, the smoke temperature should not exceed 30–35 degrees Celsius. The simplest option is to bury a metal pipe in the ground at a distance of 2-3 meters from the refrigerator and connect them with a trench or pipe. The earthen tunnel will be a natural cooler.
A more modern and compact option is to use an ejector smoke generator made of stainless pipe. It consists of a combustion chamber, where the wood chips smolder, and an air supply system. Air is supplied through a thin tube, creating a vacuum that sucks smoke into the main channel. You can connect such a unit to the refrigerator through a flexible metal hose or corrugation.

It is important to periodically check the condition of the chips. If it burns out, the smoldering stops, and the smoke stops coming, the process is disrupted. In good smoke generators, one filling lasts for 8–12 hours, but in home-made designs, additional filling may be required.
After the process is completed, the products should not be consumed immediately. They need to “ventilate” in a cool place for 1–2 days. During this time, the excessive sharpness of the smell will go away, the color will stabilize, and the taste will become more rich and harmonious.
Safety rules and care for the smokehouse
