It is difficult to imagine a modern kitchen without a humming cabinet filled with food stay fresh for weeks. However, even 100–150 years ago, people managed without electricity and freon, keeping supplies for large families all year round.

The basis of survival was a deep understanding of natural processes and the use of simple physical laws. Conservation was not a hobby, but a vital necessity on which health and life depended.

Today we often underestimate the effectiveness of old methods, relying solely on technology. However, in conditions of a power outage or a hike, it is ancient knowledge that makes it possible not to spoil the products and preserve their taste.

Cellar and basement: natural cold

The main “refrigerator” of our ancestors was cellar. This is a specially equipped underground storage facility, where stable low temperatures and high humidity were maintained all year round. The temperature in a properly constructed cellar rarely rose above +5...+7°C even in the hottest summer months.

The walls of such storage facilities were made of stone or baked brick, and the floor was often covered with a thick layer of sand or clay. This made it possible to regulate microclimate and prevent the appearance of mold. The ideal temperature for long-term storage of vegetables and pickles was considered to be from +2 to +4 degrees Celsius.

Ventilation played a critical role. Without an influx of fresh air, food began to rot, and without ventilation, it began to dry out. Therefore, the design always included two pipes: one for the influx of cold air from the street, the other for removing warm and humid air from the room.

Glaciers: reserves of winter ice

In warmer regions or for storing perishable foods (meat, fish) glacierswere used. These were deep pits that were filled in winter with crushed ice brought from frozen rivers and lakes. The ice was laid in dense layers, sprinkled with sawdust or straw for better thermal insulation.

Such storage facilities made it possible to preserve ice until late autumn. A small wooden superstructure with double walls filled with insulation was built over the glacier. Inside there were shelves for products that should not come into contact with melting water.

The use of ice required strict discipline. The doors were opened only for a short time, and only responsible custodians had access inside. It was an analogue of modern industrial freezers, but working exclusively on natural energy.

How was the quality of ice checked?

Ice for harvesting into glaciers was taken only from flowing reservoirs. It was believed that ice from stagnant ponds “choked” food and gave it a muddy smell. It was chopped in layers up to a meter thick.

Drying and drying: removing moisture

One ​​of the most accessible ways to preserve crops and meat was drying. Dehydration (moisture removal) makes the environment unsuitable for the growth of bacteria and mold. Fruits, berries, mushrooms and meat were prepared for future use using this method.

The process took place in several stages. First, the products were blanched or briefly cooked to stop the action of the enzymes. Then they were laid out on grates in well-ventilated places or in a Russian oven after baking bread.

Dried meat and fish became light and compact, which was especially important for travelers and warriors. Dry mushrooms were strung on threads and stored in a suspended state, where they could lie for years without losing their flavor.

Pickling, pickling and soaking

Salt was the main preservative before the advent of freezers. Pickling created an environment in which harmful microorganisms could not survive. Cabbage, cucumbers, mushrooms, fish and meat were prepared in this way.

Ferment differed from simple pickling in that it used lactic acid fermentation. The cabbage was chopped, mixed with salt and carrots, and compacted tightly into barrels. The released juice created anaerobic conditions, ideal for preserving vitamins.

Urine was used for apples, pears and berries. The fruits were filled with water with the addition of malt, rye flour or honey. This process required strict adherence to the temperature regime, otherwise the product could ferment too much or become moldy.

Smoking and use of fats

Smoking combined the effects of smoke, high temperature and dehydration. Smoke contained phenols and other substances that acted as antiseptics, penetrating the structure of the product. Meat and fish were smoked in special smokehouses using alder or fruit chips.

Another method of preservation was sealing in fat. Meat (for example, duck or goose) was boiled, placed in clay pots and poured with rendered fat. After hardening, the fat created an airtight seal that sealed the product from air.
