Darkening of cabbage leaves is a complex biochemical process that is triggered by a number of factors, from temperature disturbances to mechanical damage during harvesting. Biochemistry of the process: what happens inside the head of cabbage

To understand why the product spoils, you need to look deep into its structure. Cabbage consists of cells filled with cell sap containing enzymes and phenolic compounds. Under normal conditions, these components are separated by membranes and do not interact with each other. However, if the integrity of the tissues is damaged or storage conditions are violated, their mixing occurs.

The key point is oxidation. When cell sap comes into contact with oxygen, enzymes (polyphenol oxidases) trigger the oxidation of phenolic compounds. It is this process that leads to the formation of quinones, which, upon polymerization, turn into dark pigments - melanins. Simply put, cabbage darkens for the same reason that the cut of an apple or banana left in the air darkens.
