Light also plays a destructive role, especially for oils rich in polyunsaturated fatty acids. Ultraviolet rays act as a catalyst, accelerating the breakdown of molecules. That is why unrefined oilswhich are often bottled in transparent bottles, deteriorate in light much faster than their refined counterparts.
It is important to understand that hydrolysis —the breakdown of fats under the influence of moisture—also affects the quality of the product. If water gets into the oil container (for example, when washing a bottle or using a wet spoon), its life is sharply reduced. Water creates an ideal environment for the growth of bacteria and mold, which makes the product dangerous for consumption.

At temperatures above +25°C, it begins to quickly lose its unique aroma and beneficial properties. However, even at +20°C it will not spoil in a couple of weeks, although professionals still recommend keeping it cool.
Unrefined oils (“live”, first pressed) require much more careful handling. Their shelf life out of the refrigerator is limited to several weeks, and then only in a dark place. In the summer, when the room temperature exceeds +25°C, unrefined oil can go rancid in just 3-5 days.
If you notice that the oil has become cloudy or a sediment has formed, do not rush to throw it away. This is often the natural process of waxes or saturated fats hardening when the temperature drops, without affecting quality. But if there is a strong smell of drying oil or a fishy taste, the product is hopelessly spoiled.

The appearance of turbidity (not associated with hardening), a change in color to a darker one, the appearance of foam on the surface or flakes indicates that active destruction processes are underway in the product. In camping conditions, when there is no refrigerator at all, preference should be given to small volumes. Pour as much oil as you plan to use in 2-3 days into a small dark bottle. Keep your main spare container tightly closed in the coolest part of your backpack or tent.
If you live in a hot climate where indoor temperatures often exceed 25°C, storing oils outside the refrigerator becomes risky. In such cases, it is better to keep even refined oils in the refrigerator, taking them out an hour before use to keep them warm.
For storage (for example, strategic reserves), the method of preservation in glass containers with the addition of salt is excellent. The salt settles to the bottom and binds water, preventing spoilage, but this method is only suitable for certain types of vegetable oils and requires experience.
