However, before you start cutting metal and drilling holes, you need to clearly understand the operating principle of the future installation. Smoking — This is a process of processing products with smoke at a certain temperature, which gives products a specific aroma, taste and preservative properties. In order for the result to please and not disappoint, you need to carefully prepare the place, tools and, most importantly, choose the right scheme for transforming a household appliance into a culinary unit.
It is important to immediately note that not any unit is suitable for the implementation of the project. An ideal candidate would be an old Soviet refrigerator with metal inner walls or a model where the plastic insert can be easily removed. After removing all unnecessary elements, the body must be thoroughly washed using degreasers and calcined empty over a fire (if possible) or simply allowed to stand in the sun for several days to remove odors. Cleanliness is the key to the safety and quality of future delicacies.

Regularly clean the inner chamber of carbon deposits and congealed fat. Over time, a thick layer of soot forms on the walls and bottom, which can ignite the next time it is heated. It is better to clean it mechanically (with a brush, scraper) after every 3-4 uses. The bottom can be covered with foil or a layer of sand to make cleaning easier.
Check the condition of the electrical connections if you are using a heating element. The wires should be protected from high temperature (use heat-resistant insulation or ceramic beads) and not touch the metal parts of the case to avoid short circuit. All contacts must be securely fixed.
